Pumpkin Bars with Cream Cheese Frosting

More pumpkin! What can I say, it’s just that time of year! I have been making these bars for several years. They are quick, easy to throw together bars that taste delicious! They are also really moist and the pumpkin flavor never disappoints.

2 c all-purpose flour
1 1/2 c white sugar
2 tsp baking powder
2 tsp ground cinnamon
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cloves
4 beaten eggs
1 c vegetable or canola oil
1 15 oz can pumpkin

*Stir together flour, sugar, baking powder, cinnamon, soda, salt, and cloves. Stir in eggs, oil, and pumpkin until combined.
*Pour into ungreased 9×13 pan. Bake in 350° oven for 25-30 minutes or until toothpick comes out clean. Cool in pan, then frost with cream cheese frosting.

Cream Cheese Frosting:
1 package cream cheese, softened
1/4 cup butter, softened
1 cup sifted confectioners’ sugar
1/2 teaspoon vanilla extract
*In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners’ sugar.
