Twelve Days of Christmas Cookies, Day One, Soft Molasses Cookies

I love the whole Christmas season…spending extra time with family and friends, last minute gift buying, baking special treats. All of the preparations leading to Christmas Day and the celebration of Jesus’ birth! I have decided to post a “Christmas” cookie everyday for the next twelve days. This will help me get my baking done and hopefully inspire you to try some fun new recipes too!! Most of these are favorites that I make from year to year with a couple of new ones thrown in as well. I hope you’ll enjoy them!!
Molasses Cookies can be made any time of the year but there is something about the warm smell of cloves and ginger that practically shouts that Christmas is just around the corner. These soft molasses cookies are especially flavorful. Their soft texture with just a hint of crunch from their sugar coated exterior puts them in a league of their own. Make these today!

Soft Molasses Cookies
  • 2 sticks unsalted butter
  • 1 c sugar, plus more for coating dough
  • 1/2 c molasses
  • 2 1/4 tsp baking soda
  • 1 tsp salt
  • 1 1/4 tsp cinnamon
  • 1 1/4 tsp ground cloves
  • 3/4 tsp ground ginger
  • 2 large eggs
  • 3 1/2 cups all-purpose flour
In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the molasses while mixing at slow speed, then the baking soda, salt and spices. Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl to make sure everything is incorporated. Stir in the flour. Cover the bowl and refrigerate the dough for one hour.
Preheat the oven to 350 degrees. Lightly grease or line baking pans with parchment.
Shape or scoop the dough into 1 1/2 inch balls; a tablespoon cookie scoop works well here. Roll them in granulated sugar and put them on cookie sheets leaving about 2 inches between cookies.
Bake the cookies for 10 minutes. The centers will look soft and puffy which is okay. Cool cookies on pan for 10 minutes before transferring to a cooling rack to cool completely.
