Watermelon Granita

The first “official” day of summer is June 21st but it is finally starting to feel like summer here in Minnesota. Love it!! I’m not even annoyed at the birds that have been getting up way to early and chirping outside my window. It’s so good to hear them again, even if they get up a bit earlier than I would like to.

We made this watermelon granita last week. I meant to post it for you sooner but time just got away from me! My 4-year-old son LOVED this. He is a huge watermelon fan so he was in heaven! Not to mention, this is a perfect allergy-friendly treat. I could take or leave watermelon, it depends on my mood, but if you like watermelon you will love this simple and refreshing dessert. It’s a perfect and easy way to cool off on a hot summer day.

Watermelon Granita

  • 4 cups seedless watermelon, cut into cubes
  • 1/2 cup sugar
  • 2 tbsp. lime juice

Purée all ingredients in a blender. Pour into a 9- by 13-inch dish and place in the freezer. Stir with a fork every 30 minutes until mixture is slushy (up to 2 1/2 hours). Enjoy!

Does it get any easier than this?!

sounds amazing! I’m wondering if i could do it with maple sugar. I can’t have sugar cane. Have you tried it with any other type of sugars?

I have not tried this with other types of sugar yet but I think it would work great! Let me know of you try it:-)
