The next month or so is going to be all about simplicity. With baby arriving in less than 10 days (hopefully!) I have my eye out for easy recipes to make both now and post-baby. I am shockingly unprepared food-wise for this baby. With the first three kiddos I had freezer meals stashed and the pantry full off easy-to-grab snacks. Apparently I have been too preoccupied with my other three cherubs to spend too much time stocking the freezer. Fortunately, this is a summertime baby (my first!) and I’m planning on lots of easy meals like sandwiches, fruits and veggies! I’m sure there will be plenty of grilling as well which is so yummy, yet super easy. Yay!
In that light, here is a recipe that couldn’t be simpler but is still super delicious! I found it in a cookbook that I checked out from the library called Fresh Food Superfast from Cooking Light. I am rarely tempted to buy new cookbooks (I have quite a stash already) but this one looks so good! You may be seeing more from it. Anyway, the combination of tangy sour cream, sweet yogurt, and juicy peaches in this parfait was so delicious! I topped them off with a little sprinkle of blueberries but these would be a perfect breakfast with a little granola tossed on top.
Super Simple Peach Parfaits
- 1/2 cup vanilla yogurt
- 1/2 cup light sour cream
- 3-4 cups coarsely chopped peeled peaches
- 1/4 cup packed brown sugar
Mix yogurt and sour cream together in small bowl. Layer peaches, a bit of brown sugar, and yogurt mixture in glasses (3-4 depending on size). Repeat layers. Top with a sprinkle of blueberries, granola, or some chopped mint.
