Did everyone have a wonderful holiday weekend? I’ve been scarce this last week but I have a great excuse….I have been busy cuddling my new baby girl! She decided to arrive a week early…bless her little heart! I made this amazing sandwich the day before I went into labor. I think it was my good luck charm;-)
I had been on the lookout for easy, but still super delicious, meals to make with a newborn on hand. This sandwich absolutely fits the bill! It takes just minutes to throw together but it is seriously tasty. My mouth is watering just thinking about it! The chicken, apple, and cheddar compliment each other delightfully and the basil mayo is so good! I made this sandwich on focaccia, which I definitely recommend, but you could substitute your favorite bread if you like.
Shaved Chicken, Apple, and Cheddar Sandwiches with Basil Mayo
- roasted chicken breast, shaved
- granny smith apple, thinly sliced
- sharp cheddar cheese slices
- focaccia rolls
- basil mayo
Split focaccia rolls in half and spread with basil mayo. Layer on chicken, apple, and cheddar cheese. Enjoy!
Basil Mayo:
- 1/4 cup low-fat mayo
- 1 1/2 tbsp. chopped fresh basil*
- 1 tsp. dijon mustard
- 1/2 tsp. freshly ground pepper
Combine all ingredients in small bowl. Makes about 1/3 cup. Double (or triple!) as needed if feeding a crowd.
*I’ve been using this basil and I’m loving the ease of having it on hand!
