I have a small s’more kick going on here. First I tempt you with S’more Tart, now these delicious S’more Bars. I just can’t seem to help myself. I have marshmallows on my mind! These S’more Bars are delish. All of the flavor of a S’more in a little portable bar…no campfire needed…what’s not to love?! They are so yummy right out of the oven, warm and gooey. I was also pretty impressed with how good they were the next day. They stay delightfully soft and chewy. I hope you enjoy these S’more Bars as much as I did! Well, maybe not quite that much.
- 1 cups all-purpose flour
- 1 cups graham cracker crumbs
- 1/2 teaspoon baking powder
- 8 tablespoons (1 stick) unsalted butter, at room temperature
- 3/4 cup light brown sugar
- 1 large egg, beaten
- 1 cup mini marshmallow
- 1 cup bittersweet or semi-sweet chocolate chips
Preheat oven to 350ºF. Grease a 9-by-9-inch baking pan; set aside.
In a large bowl, whisk together flour, graham cracker crumbs and baking powder; set aside.
In the bowl of a stand mixer on medium speed, beat butter and sugar until light, about 2 minutes. Beat in egg until well combined. Reduce mixer speed to low and slowly beat flour mixture into butter mixture.
Reserve 1/4 of the dough and set aside. Press the remaining dough evenly into greased pan. Top with chocolate chips and sprinkle with marshmallows. Scatter the reserved dough over in clumps leaving some marshmallows and chocolate chips peeking through.
Bake in preheated oven until golden brown, 25 to 30 minutes. Place pan on a wire rack to cool completely. Cut into bars and remove from pan.
