Frozen Treat Friday ~ Blueberry Crisp Ice Cream

Welcome back to Frozen Treat Friday!  I’m just barely getting this post up on Friday. Today was crazy! Here is another treat to cool off your weekend. Blueberry Crisp Ice Cream! I love using seasonal ingredients…and this is a great time to enjoy blueberries. They taste better and are more economical too. This Blueberry Crisp Ice Cream was super yummy and enjoyed by all. I simply took a basic vanilla ice cream and folded in fresh blueberry sauce and a crisp oat topping. All the flavors of blueberry crisp in an ice cold treat!

Blueberry Crisp Ice Cream

For blueberry filling:

  • 1/4 cup water
  • 2/3 cup sugar
  • 3 tbsp. cornstarch
  • 2 tbsp. lemon juice
  • 4 cups blueberries

In a medium saucepan combine water, sugar, cornstarch, and lemon juice. Bring to a boil. Add blueberries and simmer until sauce has thickened, 4-6 minutes. It will resemble blueberry pie filling. Chill. This component can be made 1-2 days ahead.

For oat topping:

  • 1/2 cup flour
  • 1/2 cup oats
  • 3 tbsp. brown sugar
  • 3 tbsp. sugar
  • 4 tbsp. cold butter

Combine flour, oats, and sugars in small bowl. Cut in butter until mixture resembles course crumbs. Spread out on sheet pan and bake at 350 degrees for 8-10 minutes or lightly browned. Cool.

For vanilla ice cream:

  • 2 cups heavy whipping cream
  • 2 cups half-and-half cream
  • 3/4 cup white sugar
  • 1 tablespoon vanilla extract
  1. In a large bowl, combine the heavy cream and the half and half. Gradually whisk in the sugar until blended.
  2. Whisk in the vanilla. Refrigerate, covered, until very cold, at least 3 hours or as long as 3 days.
  3. Whisk the mixture to blend and pour into the canister of an ice cream maker. Freeze according to the manufacturer’s directions. Once ice cream is at “soft serve” stage fold in blueberries and the oat topping. Freeze until ready to serve. It’s best to give it a few hours to set up properly. I reserved a bit of the oat topping to sprinkle in top of individual servings. Mmmmmm!

Can you please stop doing this to me Becky? I don’t have an ice cream maker or an attachment for my kitchen aid. I won’t make the same mistake I did last year and not buy the ice cream maker I saw on clearance at Target, but till I can get the same deal (which I should be able to if I am lucky within the next 6 weeks) PLEASE stop torturing me with awesome homemade icecream!
