Caramel-Glazed Apple Bread

Apple season is here! One of my favorite things about this time of year is apple picking. It’s such a great activity for the family. The weather is finally cooling off a bit and it’s so nice to be outdoors. Of course, deciding what to do with the apples is fun too! So many delicious possibilities. Apple cider, apple butter, apple bread, apple cake, apple pie! What is a girl to do:-) Why don’t we start with Caramel-Glazed Apple Bread! Caramel is the perfect apple partner so it’s hard to go wrong with this one. This bread is so moist and the caramel glaze finishes it off perfectly.

Caramel-Glazed Apple Bread

Bread~
1 1/2 cups shredded peeled baking apples (2 large)
1 cup packed brown sugar
1/2 cup buttermilk
1/2 cup vegetable oil
4 eggs, lightly beaten
3 cups all-purpose flour
1/2 cup chopped pecans
2 teaspoons baking soda
2 teaspoons ground cinnamon
1teaspoon salt
1teaspoon ground nutmeg

Glaze~
2 tablespoons butter or margarine
1/4 cup packed brown sugar
1 tablespoon milk
1/2 cup powdered sugar, sifted

Heat oven to 350°F. Grease bottoms only of 2 (8×4-inch) loaf pans with cooking spray or shortening. In large bowl, stir together apples, 1 cup brown sugar, the buttermilk, oil and eggs. Stir in remaining bread ingredients just until dry ingredients are moistened. Pour into pans.

Bake 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes on cooling rack. Loosen sides of loaves from pans; remove from pans and place top sides up on cooling rack. Cool completely, about 1 hour.

In 1-quart saucepan, melt butter over medium heat. Stir in 1/4 cup brown sugar. Heat to boiling, stirring constantly; reduce heat to low. Boil and stir 2 minutes. Stir in milk. Heat to boiling; remove from heat. Cool to lukewarm, about 30 minutes. Gradually stir powdered sugar into glaze mixture. Place saucepan of glaze in bowl of cold water. Beat with spoon until smooth and thin enough to drizzle. If glaze becomes too stiff, stir in additional milk, 1/2 teaspoon at a time, or heat over low heat, stirring constantly. Drizzle glaze over loaves.

Hi Sarah Elizabeth! I am pretty impartial when it comes to apples. I end up getting so many different varieties in the fall that I don’t really keep track of what I use when. I currently have Zestar apples and love them!

I just made this! YUM!
The glaze is totally amazing and worth it. I see doughnuts frosted with this glaze in my future…
Mine came out a little denser than I would have liked but I may have over-mixed, so I think that I will try it again soon and play with it a little.

Mmmm…caramel topped doughnuts sound delish! Let me know it you experiment with the bread recipe anymore. I thought this bread was a bit more dense than a typical quick bread…though not in a bad way. I try hard not to post any recipes that I don’t think are top-notch:-) I want everyone to love them! Let me know if you try it again and what you think!

Hi Donna,
I have not done that…I don’t know for certain. I don’t have a bread machine so I have not looked into how well it works to make quick breads in them. Let us know if you try it!!

Hi there! I am about to try to make this! So excited!

One quick question, I assume because it says two loaf pans that this recipe is to make two loaves? Could I cut everything in half to make only one loaf?
