Apple Bars with Coconut

I’m sure I’m not the only one that’s getting into the fall spirit! Here is another quick and delicious apple recipe. I may be bombarding you with apples for awhile:-) These apple coconut bars were really good! The original recipe called for cinnamon chips, which would be delightful I’m sure. However, I didn’t have any on hand so I decided to throw in some shredded coconut. I am not typically a huge coconut fan but I loved it in these bars! They were moist and cake-like with lots of great apple flavor. They are not overly sweet so the icing on top was just the right touch. Enjoy!

Apple Bars with Coconut

  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup apple butter
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 tsp. cinnamon
  • 1/2 teaspoon salt
  • 1 cup finely chopped peeled apple (1 medium)
  • 3/4 cup shredded, sweetened coconut


  • 1 cup powdered sugar
  • 2 tbsp. milk

Heat oven to 350°F. Spray 13×9-inch pan with cooking spray. In large bowl, beat butter, granulated sugar and brown sugar with electric mixer on medium speed until light and fluffy. Add apple butter, eggs and vanilla; beat until well blended.  Beat in flour, cinnamon, baking soda and salt until well blended. Stir in apple and coconut. Spread batter in pan.

Bake 25 to 30 minutes or until edges begin to pull away from sides of pan and top is evenly browned. Cool in pan on cooling rack at least 1 hour.

In small bowl, mix glaze ingredients until thin enough to drizzle. Drizzle glaze over bars.
