Today marks two years of Becky Bakes. Amazing! Two years of sharing recipes and photographing food. Two years of eating way too many sweets for my own good…but who am I kidding…I would have done that anyway! Thank you all for being here and for encouraging me with your kind words. Baking with all of you makes life that much sweeter!
This peanut butter cookie recipe is the very first recipe I posted two years ago. It is totally underrated, at least by me. I often forget about it completely, instead favoring the ubiquitous chocolate chip cookie. But each time I make them I wonder why on earth I don’t make them more (well, kiddos with peanut allergies might have something to do with it)! Assuming that you are able to partake in peanut butter, you should really know, I have not found a more perfect peanut butter cookie than this one. Chewy, tender, and so peanut-buttery! Definitely worthy of a second look.
Peanut Butter Cookies
- 1 cup butter (2 sticks)*
- 1 cup sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 tsp. vanilla
- 1 cup creamy peanut butter
- 3 cups all-purpose flour
- 2 tsp. baking soda
- 1/2 tsp. salt
Preheat oven to 350 degrees.
In a large bowl, cream together butter, sugars, eggs, vanilla, and peanut butter. Sift together flour, baking soda, and salt and add to peanut butter mixture, stirring to combine.
Roll balls of cookie dough in sugar. Place on cookie sheet and press down with a fork (or a small potato masher), making a crisscross design. Bake cookies for 10 minutes, or until lightly browned. Remove from the oven and cool on a wire rack.
*The original recipe called for shortening but I used butter this time.

Congratulations on two years!
I love the classic chocolate chip, but after I made a batch of s’mores cookies (crushed graham crackers mixed in chocolate chip cookie dough, baked until almost done, then topped with hersheys bar pieces and marshmallows) I have barely looked at any other kind.
Mmmmm…I’ve made S’mores Bars and a tart but never cookies. I must put them on my to try list!
My favorite cookie would have to be red velvet cookies, so delicious!

2 years goes so fast… mine is coming up in a couple of months and I have learned so much in that time. Peanut Butter cookies are my hubby’s fav. I’ll have to give these a whirl for him
