Caramel Peanut Butter Oat Bars

Pop quiz! Who knows what a chocolate revel bar is? If you’re not sure, look here. I’m sure they go by other names, but where I grew up, chocolate revel bars were a potluck staple. And my mom made them better than anyone (in my not-so-humble opinion). Subsequently, I grew up baking them as well. I can’t believe I’ve never made them for you! Maybe because they are so common to me, but that certainly doesn’t make them any less amazing.

These are basically  chocolate revel bars sans chocolate. My daughter does not care for chocolate. She apparently inherited that from her dad. She is only  7 though, so I’m not writing her off yet:-) We made these with caramel sauce and peanut butter. I think the chocolate version still has the edge, but these were delicious too. It’s hard to go wrong with caramel and peanut butter!

Caramel Peanut Butter Oat Bars

Ingredients
  • 1 cup butter (2 sticks)
  • 2 cups packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3 cups rolled oats
  • 1 jar caramel sauce
  • 1/2 cup creamy peanut butter, melted
Instructions
  1. Preheat oven to 350 degrees.
  2. In a medium bowl, whisk together the caramel sauce and melted peanut butter untl smooth. Set aside.
  3. In a large mixing bowl beat the butter with an electric mixer on medium speed for 30 seconds.
  4. Add brown sugar; beat until well mixed.
  5. Beat in eggs and 2 teaspoons vanilla.
  6. In another large bowl stir together flour and baking soda; stir in oats.
  7. Gradually stir dry mixture into beaten mixture.
  8. Press 2/3 of the oatmeal mixture into a greased 9X13 pan.
  9. Pour caramel/peanut butter sauce into pan, spreading evenly over the dough.
  10. Drop pieces of the remaining dough over the caramel sauce.
  11. Bake for 20-25 minutes, or until top is lightly browned.
  12. Cool, slice, enjoy!

Those look so delicious! Some of my favorite flavors – caramel and peanut butter. Looking forward to trying this recipe.

Thanks Faye! I don’t think I have ever combined caramel and peanut butter before but I was definitely missing out!

These look so gooey and decadent – perfect! But I agree, don’t give up on your daughter yet, chocolate is such a wonderful world :)
