Day 1: Gluten-free. Dairy-free. I feel no deprivation. I feel happy. Light and refreshing smoothie = happy. If you follow me on Facebook you may have noticed my less-than-stellar opinion of coconut milk. I’m not a huge coconut fan anyway and straight-up coconut milk was just a little much for me.
Coconut in this smoothie? That is something I can totally get my head around. Plus it took like two seconds to make. Easy win.
Smoothies in the afternoon….chicken on the grill tonight. I may be feeling over-confident but gluten-free is tasting pretty good!

Fruity and refreshing, this smoothie is vacation in a glass.
Ingredients
- 1 cup fresh pineapple chunks
- 1 cup unsweetened coconut milk
- 1 banana
- 6-7 frozen strawberries*
Instructions
- Throw all ingredients into a blender and blend until smooth. Serve immediately. Enjoy!
Notes
*If using unfrozen strawberries, throw in a few ice cubes to keep your smoothie nice and chilled.

I make the same smoothie for breakfast every morning, but I usually leave out the strawberries and use frozen bananas instead. And sometimes add honey for a little sweetness.

Sounds like a good day! There are so many fantastic gluten free options…2 of my sisters eat gluten free and one also has to be dairy free, and while it may cost a bit more it is no less delicious!
